Vegan Omelette/Pancake

Recipe for Vegan Omelette/Pancake

Classic Chila

Ingredients

1 cup besan / gram flour

3 tbsp. rice flour (optional)

¼ tsp. turmeric / haldi

¼ tsp. carom seeds / ajwain

Salt to taste

½ onion, finely chopped

2 tbsp. coriander leaves, finely chopped

½ tomato, finely chopped

1 inch ginger, finely chopped

1 green chili, finely chopped (optional)

1/4 tsp. baking soda

3/4 cup water

Method

  1. Combine the gram & rice flour with water, salt, turmeric, carom seeds and baking soda until smooth like pancake batter
  2. Add onions, coriander leaves, tomatoes, ginger and fresh chili. Fold ingredients
  3. Split batter in half and add spinach puree to 1 one of the portions.
  4. In a hot pan, lightly oiled, add 1 ladel full of the batter and swiftly spread in a circular motion similar to making an omelet
  5. Once it has set and golden and lightly crisp. Flip to cook the other side for a couple of minute

Spinach Vegan Omelet

Ingredients

scallion, finely chopped

2 tbsp. coriander leaves, finely chopped

1 inch ginger, finely chopped

1 green chili, finely chopped

5 tsp. oil, for roasting

1 tbsp. lemon juice

1/4 tsp. baking soda

½ cup of water

Method

  1. Combine the gram & rice flour with water, salt, turmeric, carom seeds, salt and baking soda until smooth like pancake batter
  2. Add scallions, coriander leaves, tomatoes, ginger and fresh chili. Fold ingredients
  3. In a hot pan, lightly oiled, add 1 ladel full of the batter and swiftly spread in a circular motion similar to making a crepe
  4. Once it has set and golden and lightly crisp. Flip to cook the other side for a couple of minute
