Cabbage Soup
Recipe for Cabbage Soup
Ingredients
1 small savoy cabbage, rib removed and chopped
2 celery stalks, chopped
1 tbsp grated ginger
4 tbsp. white miso
3⁄4 tsp. white pepper
¼ tsp cumin
1 tsp. turmeric powder
¼ tsp. asafoetida
1 tsp. Himalayan salt
4 cups vegetable broth + 2 cups of water
2 tbsp ghee/ olive oil
Fresh cilantro, chopped (for garnish)
Method
- Separate the cabbage leaves, wash and drain
- Saute the ginger paste in ghee or olive oil. Add white pepper, coriander, turmeric, cumin and asafetida. Add celery and sweat until soft
- Bring broth and water to boil
- Add the cabbage leaves. Allow to soften.
- Whisk in the miso and white pepper (It helps to mix a small amount of broth with miso in a bowl and then to add it back in to the pan)
- Allow to simmer for 5 minutes.
- Finish with fresh cilantro
