Cabbage Soup

Recipe for Cabbage Soup

Ingredients

1 small savoy cabbage, rib removed and chopped

2 celery stalks, chopped

1 tbsp grated ginger

4 tbsp. white miso

3⁄4 tsp. white pepper

¼ tsp cumin

1 tsp. turmeric powder

¼ tsp. asafoetida

1 tsp. Himalayan salt

4 cups vegetable broth + 2 cups of water

2 tbsp ghee/ olive oil

Fresh cilantro, chopped (for garnish)

Method

  1. Separate the cabbage leaves, wash and drain
  2. Saute the ginger paste in ghee or olive oil. Add white pepper, coriander, turmeric, cumin and asafetida. Add celery and sweat until soft
  3. Bring broth and water to boil
  4. Add the cabbage leaves. Allow to soften.
  5. Whisk in the miso and white pepper (It helps to mix a small amount of broth with miso in a bowl and then to add it back in to the pan)
  6. Allow to simmer for 5 minutes.
  7. Finish with fresh cilantro
